Celery salad with pig ear, bacon and walnuts

Braised Pig Ear

2 Tbs olive oil
1 cup diced carrots
1 cup diced celery
2 cups diced onions
3 cloves garlic--chopped
2 pounds pig ears (about 4)
Salt
1 cup dry white wine

Warm the olive oil in a large skillet over a medium heat cook the carrots, celery and onions til soft.

While veggies are cooking scrub the pig ears and cut away any knobbing bits of cartlidge, so they lay flat. Season with salt and add the dry wine. Placed the ears over the veggies, add water and allow to simmer for 3 1/2 hours

Carefully remove the ears and place on parchment paper and cover tightly with plastic wrap and refridgerate for at least 2 hours

Celery Salad Assembly

3 strips thick bacon
1 braise pig ear
Vegtable oil
One bunch celery
1 shallot-minced
1/4 cup sherry vinegar
1/2 Tsp salt
3 Tbs chopped parsley
1/4 cup chopped toasted walnuts

Cut bacon crosswise in thin strips and cook in the skillet, and do likewise to the pig ears. When the bacon and ears have been browned (reserve the drippings)remove and place on medium heat--new skillet of course!

Carefully remove the fat into a measuring cup and add oil to make 1/2 cup. Add sherry vinegar, shallot, salt and parsley--whisk to combine

Cut celery into 1/2-2 inch matchsticks. Add 3 Tbs of the previous mixture over the celery, just enough to moisten (not drown). Add bacon bits and pig ear over the celery and add additional mixture, just to moisten. Arrange celery in a low mound on a serving plate. Scatter the remaining bacon a ear over the celery then scatter the chopped walnuts on top
